Chicken Tikka Masala is one of the most popular Indian recipes. It can be made with chicken breasts as well as chicken thighs.
Ingredients
For Marinating:
Chicken tastes best when it is marinated overnight.
- 750g boneless and skinless chicken thighs cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons garlic ginger paste
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon red chili powder
- 1 teaspoon of salt
- 1 teaspoon coriander powder
For masala paste
- 2 medium sized onion
- 4 medium sized tomato
- 2 tablespoon vegetable oil
- 2 tablespoon butter
- 1 green chilli
- 1 tablespoon ginger garlic paste
- 1/2 to 1 teaspoon red chili powder (or as per heat required)
- 2 teaspoon garam masala powder
- 1 tablespoon coriander powder
- 1 to 1 1/2 teaspoon cumin powder
- 1 1/4 cups of heavy cream
- 1/4 cup water
- 1/4 cup coriander for garnishing
- 1 tablespoon kasuri methi
- 1 teaspoon sugar
- 1 teaspoon salt
Method
- Mix all the items for marinating in a bowl, cover it and rest it overnight in the refrigerator.
- Heat oil in a pan over medium heat. Fry marinated chicken pieces until brown on each side. Keep aside the fried chicken.
- Melt the butter in the same pan. Fry the onions until soft and light brown. You can add some salt to get the brown colour without burning.
- Add tomatoes and cook until the mixture becomes thick and begins to leave the sides of the pan.
- Blend the onion tomato mixture to a thick paste.
- Once again heat the onion tomato paste. Add green chili. Add ginger garlic paste. Saute for a min.
- Reduce the heat.
- Add red chili powder, cumin powder, coriander powder, garam masala powder and sugar.
- Add water and cook until the masala paste turns thick.
- Add heavy cream and stir well.
- Once the paste turns thick add fried chicken pieces and stir.
- Then add kasuri methi and mix well.
- Cook until the chicken turns soft.
- Taste and add further salt, chili powder, garam masala powder if needed.
- Finally add the cream and garnish with coriander.
